Ingredients:

  • 1 Cup(s) sugar
  • 1/2 Cup(s) margarine
  • 1 Beaten egg
  • 1 Cup(s) Sour milk
  • 2 1/2 Cup(s) flour
  • 1/2 Teaspoon(s) salt
  • 1 Teaspoon(s) baking soda
  • 1 1/2 Cup(s) Ground raisins
  • 1 Orange
  • 1 Tablespoon(s) whipped cream
  • 1 Package(s) powdered sugar
  • 1/2 Cup(s) Chopped walnuts (optional)

Directions:
Prepare ahead: Grind raisins along with 1 medium orange (rind & juice), mixed together. Then add 1-2 T. vinegar to milk, set aside to sour.

Cream margarine and sugar. Add beaten egg. Mix dry ingredients and add alternately with sour milk, a little at a time, to creamed marg. & sugar until all mixed together. Add half of raisin/orange mixture to batter, and save remaining for the icing. Bake 30-35 minutes in 325 oven.

Frosting: Add enough powdered sugar to remaining raisin/orange mixture, plus 1 T. margarine, until nice spreading consistency. Spread on cooled cake.
