Separate eggs. Beat yolks, add 5 oz powdered sugar slowly while beating until thick. Add salt, allspice, then add baking soda. Set aside.
Beat egg whites until they hold soft peaks. Add remainder of powdered sugar (8-11 oz) slowly while beating. Fold egg yolks and whites together. Cover, refrigerate until ready to use.
Put brandy or rum in a cup, add 2 T. batter, then fill with boiling water. Sprinkle with nutmeg and cinnamon.
